Help a mentee determine their life and career objectives, and develop a plan to achieve them. Planning makes the best use of limited time and resources. The objectives and plan won't be perfect but they'll be perfectly good.
What could you offer as a mentor?
Being retired, I can accommodate the schedule of the mentee. i have considerable expertise in human resources management and development (esp with professionals), project management, and enterprise design and transformation. Recruiting, developing, and retaining staff was a significant and very rewarding part of my job as IT DIrector. Succeeding at life is similar to succeeding as an organisation. Some of the methodologies and approaches used in the design and transformation of enterprises (organisations) transfer to people. REM should consider an online "Speed Mentoring Session." DFO offered these during training week. Mentees spend 5 minutes with a mentor before moving on to the next one. It's a great way to receive several points of view on your career and to potentially find a longer-term mentor.
